Capers are the flower buds of the caper bush, pickled for a tangy flavor and crunchy texture. Hand-harvested early in the morning, they are washed and jarred in a brine of water, wine vinegar, and sea salt.

Usage: ideal for accompanying pizza, Mediterranean dishes, sauces, salads, and Königsberger Klopse. The brine can also be used to enhance and season.
